UKRAINIAN COGNAC – “LYKER OF GODS” OR POISON?

The market of alcoholic products in Ukraine offers the buyer a wide range of products – both domestic drinks and imported alcohol from even the most remote corners of the world. Due to the more democratic cost, consumers prefer alcohol produced in Ukraine.

Given the demand, Ukrainian alcohol producers successfully enter the market with domestic counterparts of almost all types of elite, “foreign” alcohol. For example – brandy or French “cognac” as a subspecies of brandy.

But not so long ago, the majority of Ukrainian brandy producers caught up with the “black strip”. The first about problems of manufacturers of the industry was declared by the deputy Sergey Leshchenko, having begun “to sound alarm”.

According to the rules of the international market and the law of origin control, only alcoholic drink made from spirits from the French department of Charente can be called brandy. For similar products made in other parts of France, in other countries, use the designation “brandy”, “vignac”, “divine”, etc.

It so happened that in Ukraine the name “cognac” stuck to all drinks sold in the domestic market – both domestic and imported. Although the “cognac” of Ukrainian production is regulated by Ukrainian legislation and is called “Cognac of Ukraine”. But when exporting for “brandy of Ukraine” use the name “brandy”.

So, what do we drink, according to Ukrainian legislation?
According to Article 1 of the Law of Ukraine “On State Regulation of the Production and Circulation of Ethyl Alcohol, Cognac and Fruit Alcohol, Alcoholic Beverages and Tobacco Products” and DSTU (State Standards of Ukraine – Ed.) 4700: 2006: “Cognacs of Ukraine are strong alcoholic beverages with a characteristic bouquet and taste, made by blending (mixture – approx.) brandy spirits obtained by distillation (distillation – approx.) brandy wine materials on special copper apparatus with fractionation, aged for at least three years in oak t PE or stainless steel or enameled tanks with oak staves. ”

Simply put, it is an alcoholic drink (about 40% vol.), Which gets its final taste as a result of long aging in oak barrels of brandy alcohol, which, in turn, is made from brandy wine materials.

Cognac production in Ukraine involves the following processes:

– obtaining cognac alcohol – the main raw material for cognacs – by making wine “according to the white wine making scheme” (this can use white, pink or red dry grapes, most importantly – without a specific aroma), further double distillation of wine (distillation); At the first stage of distillation, raw alcohol is obtained, at the second stage – brandy alcohol.

– aging of cognac alcohol (not less than 3 years) in oak barrels or stainless / enameled tanks with immersion in oak wood alcohol in the form of bars or shavings.

– blend (mixing, assemblage) after a certain period of exposure of different cognac spirits (after that, a mixture of cognac spirits can be sent back for aging); in the preparation of a blend of brandy spirits brought to the standard, trying to smooth out the individual shortcomings of some alcohols and emphasize the merits of others by proper selection of components; in addition to brandy alcohols, when blended, they use additional (permitted by GSTU standards) materials: softened drinking or distilled water, sugar syrup, and color obtained from granulated sugar;

– processing of cognac obtained as a result of aging and bottling it.

In addition, according to the standards of the State Standard of Ukraine and the Ministry of Agrarian Policy, refined sugar, edible citric acid, edible gelatin, fish glue, edible chicken egg protein, phytin and phosphoric acid are used for the manufacture of Ukraine’s cognacs.
